Made to measure in Saint-Vallier in the Drôme, this professional stove from the Molteni 1923 range has been designed according to the Chef’s needs and menu.
Its premium construction incorporates high quality control knobs and ornaments handcrafted by our craftsmen. The shiny chrome finishes with a “Black Pepper” color were chosen to blend in with the white and black walls of the kitchen. This subtle combination of choice of materials gives a contemporary universe to the whole. This main dispatch kitchen is also composed of three compact multi-slim ovens as well as two Electrolux Professional salamanders to heat and grill dishes before being sent to the dining room.

“This food reception center is located near the washing center. Composed of numerous Ecostore refrigerated cabinets, it allows products to be stored as soon as they arrive so as not to break the cold chain. Ecostore refrigerated cabinets were selected for this project for their storage capacity, which is greater than the cabinets on the market. They also save electricity and make it possible to adopt a more sustainable approach” says Clément Barthelemy Market Manager and professional cooking expert at Electrolux Professional.
“Food washing” section:
“The food washing center is located in an isolated space before the production kitchen. This space is reserved for unpacking the products and washing them. It is made up exclusively of stainless steel tables, furniture and washbasins and is easy to clean,” explains Clément Barthelemy.
“Professional production kitchen” section:
“On the production side, the kitchen is equipped with a high-end thermaline professional stove. The challenge has been to manufacture a stove that has maximum versatility and capacity in a minimum of space. We have opted for an induction hob, a fryer and a neutral plan to meet demand. On the cooking side, we have added a SkyLine 10GN professional oven to complete the cooking possibilities. A vacuum machine was installed near a cooling cell. It is ideal for preparing and storing food. On the cold side, we have chosen ecostore cold tables for their optimal storage capacity. Finally, to prepare the pastries, we have installed dynamic preparation equipment with a beater and a sheeter. What characterizes them is their ease of use and performance. Equipment is manufactured in our Aubusson factory,” explains Clément Barthelemy.
“Dishwashing” section:
“The washing area is isolated from the preparation kitchen so that dirty dishes do not come into contact with the ready-to-go dishes. This dedicated space is equipped with a professional front dishwasher as well as a professional hood dishwasher which have been designed to save water, energy and detergents throughout their life cycle” explains Clément Barthelemy.
